[Chop Nuts and open a bag of chocolate chips (your choice) in advance]
2 Cups of Sugar
2 Pounds of Butter (Do not use margarine or a butter substitute)
Constantly stir the above mixture until it reaches 300 degrees (You will need a heavy duty thermometer) Use thick kettles which have no coatings. Cook on medium heat, constantly stirring.
Once the temperature has reached 300 degrees, spread the mixture into a large jelly roll pan. Immediately place your favorite chocolate chips on top of the toffee mixture, swirling with a wooden spoon to make certain it covers the entire pan. Then sprinkle chopped nuts of your choice. Almonds are fantastic
I suggest placing the pan in your freezer for a quick cool. Once the candy is cooled, break it into pieces and place it in your favorite containers for gifts or as a desert favor.
Lime Cheese Salad
Beat the following ingredients in a large mixing bowl:
1 package lime gelatin
2 cups boiling water
¾ package of small (miniature) marshmallows
1 large package of cream cheese – 8 oz.
Include the following, once you have achieved a smooth consistency with the above ingredients.
Juice of 1 lemon
1 small can pineapple un-drained
1 cup finely cut celery
1 cup chopped nuts
Fold in the following into your mixture:
1 cup heavy cream whipped
Place in your favorite gelatin mold
TOM & JERRY’S
8 Large or 10 small eggs
½ tsp cream of tartar
¼-1/2 tsp cinnamon
¼-1/2 tsp allspice
¼-1/2 tsp nutmeg
1.4-1/2 tsp cloves
2 ½ lbs powdered sugar (approx)
Separate eggs, beat whites stiff adding cream of tartar. Beat egg yolks, adding spices. Beat or mix powdered sugar into egg yolks until yolks are too stiff to operate beater. Thoroughly mix egg whites with eg yolk mixture. Do not whip final mixture. Folding is best – refrigerate
Add ½ cup batter to ½ oz brandy ½ oz rum and boiling water. Sprinkle with nutmeg
